Shabuzen-Shiwa is a distinguished shabu-shabu restaurant in Jingumae, between Shibuya and Harajuku, where premium ingredients are cooked in distinctive stone pots made from hornblendite. Since opening in 1989, the restaurant has built its reputation on A5-grade black wagyu from Iwate Prefecture, aged for three weeks for depth of flavour, and a signature octopus shabu-shabu using tender Hokkaido giant Pacific octopus. The menu offers course meals that begin with carefully prepared appetisers and fresh seafood, including snow crab, before moving to the aged wagyu and finishing with handa somen in a rich, fragrant broth. The tranquil interior features counter, table and private room seating for around twenty-four guests, with seasonal decorations and a garden apricot tree that adds a quietly traditional touch.
